National Tortilla Chip Day 2011

Today is National Tortilla Chip Day, the perfect follow-up from Tuesday's National Margarita Day. You can do more with a bag of tortilla chips than simply scoop up salsa or guacamole.

Make tortilla chip casserole with tortilla chips as a base for condensed cream of mushroom soup, condensed cream of chicken soup, diced tomatoes, meat or beans, milk and cheese. Pop it in the oven and dinner is ready in under 45 minutes.

For a creative change of pace, try Food Network's tortilla-crusted tilapia. This recipe coats tilapia filets with flour, eggs and crushed tortilla chips and bakes for 15 minutes. Use multi-colored chips for a colorful entree.

Spice it up or make it mild but whatever you do, be sure to celebrate National Tortilla Chip Day with a crunch today.
